AVIAL(AVIYAL) is a tasty kerala food ,it is made with mixed vegetables ,coconut and curd.It is used ads a main dish in ONAM ,VISHU sadhya



Needed   Ingredients


Ash gourd      3/4 cup

Cucumber       1 cup

Carrot              1

Drumstick      1

Beans              6-7

Potato              1

Raw plantain  1

Raw Mango - few pieces 

Elephant foot yam -100 grams

Curd -2 tbsp

FOR GRINDING WE CAN USE

 

coconut  (Grated )    1 cup


 Jeera and  Cumin seeds    
1/2 tsp

chilli(green) -3

for seasoning

 2 or 3 tbsp of coconut oil
curry leaves

METHOD OF PREPARATION
clean and peel all vegetables and cut it in to 2 inch long piece.First cucumber, plantain and ash gourd together in a pan and add salt separately.when it half cooked then add chopped mangoes.Add other all vegetables into pressure cooker and cook with  salt and turmeric powder until 2 whistles.Add Curd and mix well test for salt. Season with coconut oil and curry leaves.

it is very tasty dish and very healthy dish.It is the  main item in kerala festivals
